Used the final cold-fermented dough to make focaccia in a 9x9 pan instead of pizza. Baked at 450°F for 20-25 min, dimpled with olive oil and flaky salt, pan on the preheated steel for a crisp bottom. Served with homemade hummus and fried onions. Photos to come.

So good. Made 3 large servings. Mixed the mushrooms in as well as a whole box of chives, and used 1 block of beechers.
Next time: Nothing. Perfect.
